"Anmitsu" is a Japanese classic dessert for summer, a combination of kanten jelly, coarse sweet red bean paste called "anko", and different fruits.  Sweets "mitsu" or syrup is added on top.  The name "anmitsu" is from "anko" and "mitsu".  The colorful cube kanten jelly representing ice cube make you feel a little cool in hot humid Japanese summer.
